The Ryebeck team pride themselves on “Simple Food, Done Well”, with a menu packed full of flavours from the Cumbrian countryside. In essence, they describe it as “Real food, local flavour”.  Their food philosophy is pretty straightforward; to use the freshest possible local ingredients from small suppliers to create simple, tasty dishes for you to enjoy in a relaxed and informal setting. We like that and are pleased to say they led the way, becoming the first fine food dining restaurant to start using our eggs.

Laid With Love – free range eggs – packing a punch

Talking breakfast, their breakfast chef couldn’t be happier with our eggs. It seems that guests at The Ryebeck  prefer their eggs scrambled for breakfast, but Head Chef loves to do more with them.

Steven Jackson is Head Chef and has been at the hotel for 2 ½ years, working his way up from Junior Sous.  Steven said, “we love Laid With Love eggs for their colour and consistency – and also for their deep, rich flavour.” After closing during Covid, he welcomed a new team into his kitchen and commented that were equally amazed by the colour of our yolks.

With such golden yolks, our eggs are a very versatile ingredient and Steven likes to showcase them in all their glory. This summer he created a Lemon Curd Eton Mess for his a-la-carte dessert menu – not only do our eggs make great tasting, vibrant lemon curd, but the stable whites also make fantastic meringue too.

Whilst chatting, Steven created a simple example of how our eggs create a stunning yet simple summer dessert, very like the Eton mess on his menu:

On a simple white dish, Steven created sunshine on a plate: Lemon Curd, crumbled meringue with steeped blueberries, a blueberry and lavender sorbet and tiny sprigs of fresh thyme picked from their garden.
